There was one that seemed vaguely respectable, though viewing some of the replica watch sites I cannot see how they're legal.

A guy I've used in the past is Andrew at Trusty Time (google him).

Many watch manufacturers assemble in Switzerland but get the parts in China. In order to stop replicas they tend to spread the parts over a number of factories.

this guy has contacts in a lot of places and can generally remake the exact watch.

There is a site called world of watch that does replicas. I looked into doing it myself and actually contacted some of the Chinese factories that make them, ?ú45 for an ETA movement Rolex Daytona which sells for ?ú500+ however you need to import a whole container load and I would probably go to prison so decided against it
 
How do you get round trademark infringement even when you're not purporting to be an original watch? Surely even paying tribute to a watch still infringes trademark? Or do watch premium brand manufacturers turn a blind eye as replicas stimulate demand for originals?

You're still looking at ?ú300 for a proper replica though. Handy if what you want is too rare or to get an idea of whether you like one before shelling out thousands.

No. Most of them use a quartz movement, that you would find in a sub 100 pound watch
