    Even though he's not been involved for some time, The Waterside is an absolute miracle - they single(dual) handedly managed to convice the French that decent food could be cooked outside of the country.

    You only have to look at the chefs who went through La Gavroche. The war and rationing cast a long shadow over British cooking. The Roux brothers, along with a few others, were instrumental in moving us on and improving how we eat. We also shouldn't forget how bad British restaurants were as well, they did a hell of a lot to drive up standards.
